Porcini mushroom is the highest quality wild mushroom which could be found in different habitats, but most likely in the oak, hornbeam, beech, and pine tree woods, where it grows in symbiosis with a host-tree. It is not possible to grow this kind of mushroom outside its natural environment.

Let's mention several types of Porcini mushroom growing in Eastern Europe: Spring Boletus (Boletus Reticulatus), Summer Boletus (Boletus Aerus), Fall Boletus (Boletus Edulis), Pine Boletus (Boletus Pinicola), and Red Boletus (Boletus Fuscoruber). Porcini mushroom growing season starts in May and lasts until the end of October.

The body of Porcini mushroom consists of a soft and juicy cap and a thick stalk. An average cap width is 10 - 15 cm, and the length of stalk can be up to 15 cm. The colour of the cap comes in different shades of brown, beige and red. Inner part of the cap of very young mushrooms is white, while it is light or dark green at ripe and old mushrooms.

Porcini mushroom is an edible mushroom with rich aroma and lush taste (smells like hazelnut or green walnut), and a high nutritious value. This means that this mushroom is at the same time very delicious and extremely healthy. It is abundant with proteins, carbohydrates, vitamin C and vitamin B complex, and contains almost no oil. Because of all the mentioned characteristics, and especially due to the high percentage of proteins it contains, Porcini mushroom is very often called "the meat from the woods". It is important to mention that scientists consider that it has the anti-carcinogenic characteristics.

CHANTERELLES

Chanterelles grow in all kinds of woods in summer. It is being picked and used as a whole mushroom, including stem. Rich with vitamine A and carbohydrates, its meat is very solid and it smells like apricot.. It can stay fresh for 2-3 days. It is being sold as fresh, frozen and in brine.

 

MORELS
(Morchella Conica)


Morels grow in early spirng, after long rainy periods, as early as in April, in aspen groves, in orchards, meadows near springs and rivers. Because of its famous fragrance and taste, it is regarded as one of the top-quality mushrooms.

 

FAIRY RING MUSHROOMS
(Marasmius Oreades)


Fairy-Ring mushrooms grow from May to October in grassy places - meadows, gardens, grassy woods - both in flat and mountainous regions. It is delicious edible mushroom suitable for soups. The flesh of the mushroom is whitish, with a pleasant taste and bitter almond-like smell.
